Harvest:
Merlot: from 12nd to 16th September
Barbera from 5th to 10th October

Fermentation: with micro-oxygenation of the must at every pump-over for quality, colour, mellowness, perfume.
Selected yeasts in absence of sulphur dioxide
Merlot : from 19th to 30th September
Barbera : from 14th to 28th October

Bottling: under an inert atmosphere. The wine is unoaked.
